It's almost Christmas, which means it's my favorite time of the year! I absolutely LOVE holiday baking and spending time with my family decorating the tree. This year, we'll be in New York living out of a hotel so we likely won't get much baking done, but I was able to whip up some simple sugar cookies before leaving Virginia. DISCLAIMER: Icing cookies is much harder than it looks. Eventually, I gave up and left some of the cookies iced in one solid color because it was taking forever!
• 1/2 Cup unsalted butter
• 1/2 Cup granulated white sugar
• 1/2 teaspoon vanilla extract
• 1/4 teaspoon almond extract
• 1 egg
• 1 teaspoons baking powder
• 1 1/2 cups all purpose flour
1. Preheat oven to 350° F.
2. In a large bowl, user a hand mixer to cream butter and sugar until smooth. Then beat in extracts and egg.
3. In a medium sized bowl combine baking powder with flour, adding small amounts at a time to mix together. The dough should be slightly sticky, but if it's too sticky add a bit more flour.
4. Roll the dough out onto a floured surface or non-stick mat. Use cookie cutters of your choice to cut the dough.
5. Bake at 350 for 8-10 minutes. Let the cookies cool on a cookie rack until firm enough to move to a hard surface to ice!
• 4 cups powdered sugar
• 1/2 cup milk or cream
• 1 teaspoon of vanilla
• Food coloring of your choice
1. Mix together all ingredients and divide into small bowls if using various colors. If icing is too thin, add more powered sugar to thicken it for decorating.
2. You can use a plastic bag to ice your cookies if you don't have a kit, just cut off the tip, decorate and enjoy!
