Happy Monday y'all! Several of you asked for this recipe from a picture I posted to my Instagram so here it is, my EASY & FAST Breakfast Roll Ups! You can prepare these the night before, leave them in the refrigerator and bake them when you're ready for breakfast. Follow the steps below for this warm, crispy recipe!

INGREDIENTS:
• 3 eggs
• 1/2 cup ham
• 1/3 cup cheese
• 1/3 cup corn
• 1/4 cup onion
• 1/3 cup mushroom slices
• wonton wrappers

 

DIRECTIONS
1. Preheat your oven to 350 degrees

2. Cook your eggs enough so that they are mostly cooked, but still moist (they will continue to cook slightly in the oven)

3. Slice your onion and cheese so that they are in thin slivers. You don't need to chop up the mushroom and corn unless you want to. Slice or cube your ham and arrange the ingredients in each wonton wrapper and roll up

4. Place the wontons on a baking sheet and bake in the oven for 10 minutes, or until golden brown. Once the first side is crisp enough, flip the wonton roll-ups over and cook on the opposite side for 10 minutes or until golden brown

5. Let cool and serve with mustard

The BEST Homemade Waffles

Raise your hand if breakfast is your favorite meal of the! It's definitely ours and we could honestly eat breakfast food for every single meal for the rest of our lives. We don't typically eat many waffles, mainly because I'm allergic to gluten so we stick to eggs and bacon, but I wanted to share my recipe for waffles that I used to make all the time before I found out I was allergic to gluten. 

We're heading home in a few days to stay with my parents for the holidays and I'll be serving these waffles up at least once for everyone since they seriously are THE BEST waffles. You can also make a savory version of the waffles by adding in fresh chopped rosemary and thyme - find that recipe over here with our famous sausage gravy.

The Best Homemade Waffle Recipe

INGREDIENTS FOR WAFFLES
• 2 cups all-purpose flour
• 1 tablespoon baking powder
• 1 teaspoon sugar
• 1 teaspoon table salt
• 1/2 teaspoon baking soda
• 2 tablespoons crisco shortening
• 1 stick butter (chilled and sliced into pats)
• 2 tablespoons fresh rosemary (chopped, optional for savory version)
• 1 tablespoons fresh thyme (chopped, optional for savory version)
• 1 1/2 cups low-fat buttermilk (chilled) 
• Cooking spray

DIRECTIONS
Preheat your waffle iron. In a stand mixer or large bowl, add the flour, baking powder, sugar, salt and baking soda and whisk together. Add the shortening and mix with flour until small, pea-sized pieces form. Add the cold butter and toss until all of the cubes are coated. Add buttermilk to the flour mixture then mix in rosemary and thyme. 

Spray waffle iron with cooking spray so the waffles don't stick. Scoop dough rounds onto waffle maker and cook until golden brown, about 5 minutes. Let cool and enjoy!

 
 

Homemade Waffles & Sausage Gravy

INGREDIENTS FOR WAFFLES
• 2 cups all-purpose flour
• 1 tablespoon baking powder
• 1 teaspoon sugar
• 1 teaspoon table salt
• 1/2 teaspoon baking soda
• 2 tablespoons crisco shortening
• 1 stick butter (chilled and sliced into pats)
• 2 tablespoons fresh rosemary (chopped)
• 1 tablespoons fresh thyme (chopped)
• 1 1/2 cups low-fat buttermilk (chilled)
• Cooking spray

INGREDIENTS FOR SAUSAGE GRAVY
• 1 tablespoon butter
• 1 package of Jimmy Dean Roll Sausage
• 1/4 cup all-purpose flour
• 2 cups whole milk
• 1 teaspoon chives (chopped, for garnish)
• Salt and freshly ground black pepper

DIRECTIONS
Preheat waffle iron. In a large bowl, add the flour, baking powder, sugar, salt and baking soda and whisk together. Add the shortening and mix with flour until small, pea-sized pieces form. Add the cold butter and toss until all of the cubes are coated. Add buttermilk to the flour mixture then mix in rosemary and thyme. 

Spray waffle iron with cooking spray so the waffles don't stick. Scoop dough rounds onto waffle maker and cook until golden brown, about 5 minutes. Set aside while making sausage gravy.

In a large pan, add butter and melt over medium heat then add Jimmy Dean Roll Sausage breakfast and cook until browned. Slowly add flour and stir until dissolved. Gradually stir in milk and cook until thickened and bubbly, about 5-7 minutes. Season with Kosher salt and freshly ground black pepper. Serve over biscuit waffles and top with chopped chives.

Banana Protein Pancakes

INGREDIENTS
• 4 bananas
• 4 eggs
• 1 scoop chocolate whey protein powder
• 2-3 tbsp PB2 with chocolate

DIRECTIONS
1. Mash together egg and bananas with fork or in a blender to get the mixture extra smooth. Add in the protein powder and PB2.

2. Spray a small non-stick pan with cooking spray and place on the stove over medium heat. Pour about one cup of pancake batter into the pan and cook until the edges begin to bubble then flip over and cook until done. Repeat until you've used all of the batter.

3. Enjoy plain or with your choice of topping!
