Homemade Pasta Recipe

Homemade Pasta With KitchenAid

Y'all, we officially have less than one week until it's Christmas Day! As I've said before, we're living in a hotel this year so unfortunately we don't have the resources to keep up with holiday baking, but today we're dedicating our post to making fresh, homemade pasta with my favorite kitchen essential, the KitchenAid Stand Mixer

If you've never had fresh pasta before, then you are in for a real treat. You really can taste the difference - it's much more tender and cooks within 2-3 minutes compared to the 10-15 minutes it can take to cook boxed pasta. Honestly, this is one of the easiest homemade foods you can make with KitchenAid! So, if you have your stand mixer and the pasta press attachment, scroll down to get started.

2 cups of flour
3 eggs
2 tablespoons olive oil (optional)

For the Pasta
Mix 2 cups of flour, 3 eggs and 2 tablespoons of olive oil in your stand mixer on speed 2 using the dough hook. Once the dough is mixed, form it into a ball and lay it out on wax paper sprinkled with flour. Attach the Gourmet Pasta Press attachment to your KitchenAid Stand Mixer with the pasta attached of your choice (we used spaghetti this time) press and set your mixer to speed 6 while slowly feeding it walnut sized portions of dough. I always make sure my hands are dusted with a layer of flour so the pasta doesn't stick to me. Once you have made all of your pasta, boil a pot of water and cook the pasta about 3 minutes or until it floats and set aside.
